31 Days of Halloween 2014 - Day 3: Caramel Apple Scones

Hey there :)  Thanks for tuning in for Day 3!

If you were here yesterday, you saw the Apple Pie Scones.  Today, we're going to make another apple variation - caramel apple.  Because what would Fall and Halloween be without caramel apples??  Nothing, I tell you.  Nothing!

This one is actually easier than what I did yesterday.  I used 2 Honeycrisp apples and some caramel candies...or, if you like to save time and can find it (I totally couldn't...) use these.  They're amazing!

Use the same scone recipe as yesterday (original here), but this time, instead of adding apple pie filling, add fresh chopped apples and either caramel bits or chopped caramel candies (I cut mine into quarters).

This mixture will keep its shape like it's supposed to, so you can divide the dough into quarters and make little pancake thingies like the recipe calls for and cut them into 8ths. 

Bake according to recipe instructions (I baked mine for about 17 minutes, but I would do it a little longer next time - they were great out of the oven, but a little bit doughy this morning.)

I *might* be sitting eating the leftover caramels and apple peels at the same time.  Okay, I totally am.  And I regret nothing.  SO GOOD!

**Note** These have to be eaten warm.  If you eat them cool, the caramel will be hard and chewy, so you might want to zap them in the microwave to soften them up a bit before eating - if they last long enough to cool off in the first place ;P


  • Don't like it as sweet?  Make it with just apples.
  • Don't want to worry about the caramels hardening back up?  Use caramel ice cream topping in the dough instead.  This will make them not hold up and they will spread pretty considerably, but you will get the flavor and not have to worry about chewiness.  
  • Want more caramel flavor?  Mix caramel ice cream topping into the dough (a little goes a long way) or drizzle it on top as a glaze.
